Salad Dressings


Garlic & Herb Vinaigrette

2 medium cloves of garlic, crushed

1/4 tsb. each:
   dry mustard
   dill weed
   oregano
   basil


5 Tbs. olive oil

5 Tbs. red wine vinegar

1/4 tsp. salt (more to taste)

black pepper

2 small scallions, minced

a pinch of celery seed

1 Tbs. orange or lemon juice

Combine everything and mix well. Store in a tightly covered jar.
Yield: 3/4 cup (easily doubled)


Creamy Mustard Dressing

2 Tbs. dark mustard (Dijon-style)

To taste: salt

1/4 cup dry white wine black pepper

1/2 cup olive oil cayenne

1/4 cup half & half

Whisk together until well combined. Yield: a little over a cup


Orange & Sesame Dressing


1 cup orange juice

1/2 tsp. salt

1/4 cup red wine vinegar

1/2 tsp. dry mustard

1/2 cup vegetable oil

1/2 tsp. dill weed

1 Tbs. tamari sauce

1 large clove of garlic, crushed

2 Tbs. Chinese sesame oil

Combine everything; mix well. Yield: 2 cups
